The judging was difficult (though tasty!), but we were able to narrow it down to two winning recipes. Thanks to Chef Anthony Sedlak for helping us pick and prepare the winners, and to Canadian Tire for supplying the grand prize!

Grilled Chicken with Apple Cranberry Quinoa

Ingredients:4 chicken breasts
Salt and pepper to taste
2 cups quinoa
4 cups low sodium or homemade chicken stock
1 granny smith apple, finely diced
1/2 red onion, very finely sliced
1/3 c sunflower seeds, toasted
1/3 cup dried cranberries
1/4 cup goat's cheese, crumbled
3 tbsp. fresh parsley, minced
Vinaigrette to taste (2/3 cup olive oil, 1/3 cup apple cider vinegar, 1 tbsp Dijon mustard, 1tbsp honey, salt and pepper in blender for 30 seconds)
Season chicken breasts with salt and pepper. Grill on barbecue for about 7 minutes per side, or until cooked through, set aside.
Bring chicken stock to a boil, add quinoa, stir, cover and reduce heat to a simmer. Cook for about 12 minutes or until all liquid is absorbed. Remove from heat and let sit in covered pot for 10 minutes.
Toss quinoa, apple, onion, sunflower seeds, cranberries and parsley together in a mixing bowl. Add vinaigrette to taste and mix well. Gently mix in goat's cheese.
Slice chicken in strips. Top quinoa with chicken and serve.

Chocolate (Avocado/Coconut) Pudding

Ingredients:
5 small or 3 large Bananas – must be just ripe but not brown
3 ripe avocados
1 can Coconut Milk
4 tbsp. or so cocoa
1/3 cup Honey
1 tsp Vanilla
Blend all in the food processor and serve with a few slices of banana on top, enjoy!
