Warm Mango Salad

Preparation time: 15 minutes or less

Salad made easy

ingredients

Dressing

2 tbsp

(30 mL) olive oil

1 tbsp

(15 mL) lemon juice

1 tsp

(5 mL) honey

 

Salt and pepper to taste

Salad

1 pkg

(250 g) halloumi cheese (President's Choice is one widely available brand)

 

Mixed greens

2 cups

(500 mL) thawed mango

directions

1.

Slice cheese crosswise into 8 pieces, and fry in a dry skillet over medium heat until golden, about 2 minutes each side.

Place on a bed of mixed greens and top with mango. Drizzle dressing over salad and sprinkle with finely chopped green onion.
