Warm Mango Salad

(30 mL) olive oil |

1 tbsp |
(15 mL) lemon juice |

1 tsp |
(5 mL) honey |
|

Salt and pepper to taste |

Salad |
|
|
1 pkg |
(250 g) halloumi cheese (President's Choice is one widely available brand) |
|
|
Mixed greens |
|
2 cups |
(500 mL) thawed mango |
directions

Slice cheese crosswise into 8 pieces, and fry in a dry skillet over medium heat until golden, about 2 minutes each side. |

Place on a bed of mixed greens and top with mango. Drizzle dressing over salad and sprinkle with finely chopped green onion. |
